Ingredients:
- 1/2 cup butter
- 6 Tb flour
- 1 quart hot milk
- 1 tsp salt
- Dash of white pepper
Procedure:
Melt butter in a saucepan, add flour, and stir until smooth.
Remove from heat and gradually stir in milk.
Use a wooden spoon while stirring to prevent sauce from sticking to bottom of saucepan.
Return to heat and cook, stirring constantly, until sauce is smooth and thickened.
Reduce heat and cook a few minutes longer.
Stir in salt and pepper, cover tightly, and place over hot water to keep warm.
Yield: 4 cups
