A custard delight!

Pastry and filling

Ingredients:

  • 1 qt. Milk

  • 7 eggs (4 whole and 3 yolks)

  • _ lb. sweet butter

  • 2/3 c. farina

  • 1 _ c. lemon flavoring

  • _ lb. filo
Procedure:

Heat milk to lukewarm.
Beat eggs with sugar; add _ cup farina.
Add slowly to milk over low heat; stir constantly.
When mixture starts to swell, add balance of farina.
Continue stirring 10 minutes or until mixture thickens.
Do not allow to become too thick.
As soon as mixture appears to thicken, remove from heat and add _ cup melted butter; mix well.
Add lemon flavoring.
Butter half of filo (each sheet separately with sweet butter) and place in 11x13 inch pan.
Pour farina mixture in pan and top with remaining filo, preparing as for bottom layer.
Cut into 2-inch squares, being careful to cut only the top layer of filo.
Bake in 400 degree oven until golden brown, 20 to 30 minutes.


Syrup

Ingredients

  • 2 c. sugar
  • 1 c. water

Procedure

Boil and simmer ingredients with lemon peel.
Add hot syrup to hot mixture (You may have to cut filo more deeply so that syrup will penetrate).
Allow to cool completely before cutting thoroughly.
