Ingredients:
- 2 c. flour
- 2 c. water
- 1/3 c. butter
- 5 c. cooking oil (for frying)
- 1 tsp. Salt
- rind of 1 lemon
- 8 large eggs
- 1 _ c. honey
- cinnamon
Procedure:
Boil water, butter and lemon rind in a large skillet for 2 minutes.
Remove from heat and remove lemon rind.
Add flour and salt all at once and stir vigorously.
Cook over medium flame, stirring constantly, until mixture forms a large ball that does not separate.
This takes about 5 minutes.
Remove from heat and cool to lukewarm.
Add eggs, one at a time, beating thoroughly after each one.
Continue beating until mixture is smooth.
Drop from a teaspoon into very hot olive oil and cook until golden brown for 8-10 minutes.
For best results, use deep saucepan.
Remove and drain on absorbent paper.
Dilute honey with water to taste and pour as syrup over Loukoumades.
Sprinkle generously with cinnamon and serve hot.
Powdered sugar may be substituted for honey.
Makes 55 pieces.
