Spanakopita (Spinach Pie)

Ingredients:


  • 1 lb. Filo dough

  • 1 lb. butter

  • 4 pkg. Frozen chopped spinach

  • 3 bunches scallions, chopped

  • 1/3 c. dill

  • 1 lb. Feta cheese, crumbled

  • 4 eggs

  • Salt and Pepper to taste


Procedure:

Sautee scallions with spinach.
Add salt and pepper. Take off stove and leave to side.

In another bowl, mix crumbled feta cheese with eggs.

Combine two mixtures and set aside.
Butter a 14x11 _ inch pan (or one with similar dimensions).
Layer the first _ lb. filo in pan buttering each individual filo sheet.
Spread out spinach mixture evenly on filo and cover with last _ lb. of filo, buttering each filo sheet.
To make cutting easier, trace diamond shapes on top layer of filo.
Bake at 350 degrees for about 40 minutes, or until the top layer is golden brown.
